Cajun Hapuku with Watermelon

Ingrediants:

  • 600 grams hapuku.
  • 1 teaspoon onion powder.
  • 1 teaspoon garlic powder.
  • 1 teaspoon dried oregano.
  • 1 teaspoon dried thyme.
  • 1½ teaspoons paprika.
  • 1 teaspoon cayenne.
  • 1 teaspoon salt.
  • Freshly-ground black pepper.
  • 8 wedges of watermelon.
  • Plain flour.
  • Yoghurt.
  • ½ lemon.
  • ½ telegraph cucumber.
  • Freshly-chopped mint.

Directions:

  • Mix spices together and coat fish in blackening mix.
  • Heat oil on barbecue and cook fish, brushing with oil and turning over.
  • At same time, cut watermelon to about ½ cm thickness.
  • Coat with flour and cook together with fish.
  • Brush melon with oil and turn over.
  • To make sauce:.
  • Mix together yoghurt, squeeze of lemon, mint and grated cucumber.
  • To serve, place fish and watermelon on plate.
  • Top with sauce.
 

 

Hapuku (groper) bass and Bluenose
Hapuku (groper) bass and Bluenose These three popular recreational species are quite often incorrectly lumped together, under the heading ‘hapuku’.
When the angler in your household says he is heading out ‘’puka fishing’ he generally means he is targeting all three species. They all live, as a rule, in water 100 metres-plus deep with bass and bluenose in particular being cellar dwellers.
All three have similar eating qualities. Their flesh is firm and white, and as a group of species they are much sought after in the eating stakes.
