Barbecued Hapuku Steaks

Ingrediants:

  • 1 kilogram hapuku steaks, 3cm thick.
  • 2 teaspoons lemon juice.
  • Olive oil.
  • 1 cup tomato sauce.
  • 1 teaspoon horseradish.
  • ½ teaspoon salt.
  • ½ teaspoon garlic salt.
  • 1 cup sour cream.
  • 1 tablespoon chopped chives.

Directions:

  • Sprinkle both sides of the steaks with lemon juice and oil.
  • Mix tomato sauce, horseradish, salt and garlic salt into a sauce.
  • Brush both sides of the steaks and place on the oiled barbecue plate.
  • Cook for 8-10 minutes on each side or until fish flakes easily.
  • Baste frequently while cooking.
  • Just before serving add sour cream and chives to the remaining sauce.
  • Heat gently on the barbecue and serve over the fish steaks.

Hapuku (groper) bass and Bluenose These three popular recreational species are quite often incorrectly lumped together, under the heading ‘hapuku’.
When the angler in your household says he is heading out ‘’puka fishing’ he generally means he is targeting all three species. They all live, as a rule, in water 100 metres-plus deep with bass and bluenose in particular being cellar dwellers.
All three have similar eating qualities. Their flesh is firm and white, and as a group of species they are much sought after in the eating stakes.
