Scallop, Kingfish and Bacon Kebabs

Ingrediants:

  • 8 slices of shoulder bacon, cut into 8cm strips.
  • 500 grams of skinned and boned kingfish fillets.
  • 20- 30 scallops.
  • ¼ cup olive oil.
  • 2 tablespoons fresh lemon juice.
  • 1 teaspoon dried sage.
  • ½ teaspoon salt.
  • Ground pepper, to taste.

Directions:

  • Blanch bacon by cooking in a pot of boiling water for 3 minutes.
  • Drain and rinse bacon with cold water and pat dry with a paper towel.
  • Cut kingfish fillet into 3cm square cubes.
  • Combine olive oil, lemon juice, sage, salt and pepper in a medium bowl.
  • Add scallops and fish cubes; gently stir.
  • Cover and marinate in the refrigerator for 30 minutes; stir occasionally.
  • Remove scallops and fish cubes from the marinade.
  • Drain on a paper towel.
  • Wrap a strip of bacon around a scallop and thread onto a skewer.
  • Wrap a strip of bacon around a fish cube and add to skewer.
  • Repeat, alternating scallops and fish on 4-6 skewers.
  • Cook under a grill or over a barbecue for 8-10 minutes.
  • Turn and baste frequently while cooking.
  • Cook until bacon is a light brown and sizzling.
  • Ready when the scallops and fish are a clean white colour.

Scallops If there is one shellfish that has almost universal appeal it is scallops.
Scallop meat’s delicate but distinct taste lends it to a variety of dishes, and they are available throughout New Zealand from Stewart Island to North Cape.
Scallops are not hard to find. The season is August to February in most areas; although, this does vary from region to region so check with your local Ministry of Fisheries office (0800 4 RULES).

Scallops can be gathered from the shoreline in some harbours and after a decent blow they are occasionally found pushed up onto open-coast beaches. Individual catch limits vary from 20 to 50 according to the region they are gathered in, but universally they must measure 100mm across the shell. Anyone gathering scallops washed up on the shore must also adhere to daily bag limits.
