Chilli Rig

Ingrediants:

  • 1 kilogram rig fillets.
  • 1 cup sweet chilli sauce.
  • 1 cup mayonnaise.
  • Panko breadcrumbs.
  • 1 cup grated cheese.

Directions:

  • Create steaks by cutting fillets on the angle.
  • Smear a thick layer of sweet chilli sauce over the base of a casserole dish.
  • Place a single layer of the fish on the sauce.
  • Cover with plenty of mayonnaise.
  • Coat liberally with breadcrumbs, followed by cheese.
  • Bake uncovered in an 180°C oven for 20 minutes.
  • Brown topping off under the grill.
 

 

Sharks
Sharks Ever wondered where the name ‘shark and tatties’ originated? The answer is simple: for many years takeaway shops used ‘lemon fish’ or ‘doggie shark’, the common names for spotted dogfish or rig, as the species of choice for their fish and chips.
Shark was easily caught and inexpensive, and incidentally made great fish and chips, battered and served with a squeeze of lemon.
