Kingfish and Mustard Sauce

Ingrediants:

  • 750 grams filleted, skinned and kingfish fillets.
  • 1-2 tablespoons of milk.
  • Salt and freshly-ground cracked pepper.
  • 30 grams butter.
  • ¼ cup flour.
  • 1½ cups milk.
  • 2 tablespoons French mustard.

Directions:

  • Heat oven to 160°C.
  • Lay fish fillets in an ovenproof dish.
  • Pour a little milk over fillets and season, to taste.
  • Cover with tinfoil and cook for 15 minutes in preheated oven.
  • Melt butter in a heavy-based saucepan.
  • Stir in flour until frothy.
  • Allow to cool.
  • Add 1½ cups of milk and bring to the boil.
  • Stir continuously.
  • Add mustard and season, to taste.
  • Take fish from the oven and place on a serving dish.
  • Spoon sauce over fillets and serve.
 

 

Kahawai

Kahawai

Known in more recent times as ‘the people’s fish’, kahawai is a species that European New Zealanders, until recently, treated with some disdain.

“I don’t eat bait!” was for many years a common call as the kahawai was kept for just that – as a lure to catch more popular recreational species. But like gurnard and trevally, kahawai is seen more commonly on our tables and is less often destined for the bait freezer.
