Hoisin-Glazed Yellowtail

Ingrediants:

  • 4 kingfish fillets or cutlets.
  • 2 tablespoons Hoisin sauce.
  • Juice of 1 lime.
  • 1 teaspoon honey.
  • 1 clove garlic, finely chopped.
  • 1 tablespoon fresh-chopped coriander.
  • Sea salt.
  • 1 tablespoon lemon-infused avocado oil.
  • 1 teaspoon sesame oil.

Directions:

  • For glaze, combine Hoisin sauce, lime juice, honey, garlic and coriander.
  • Mix in a small bowl and season with sea salt.
  • Set aside for up to 3 hours.
  • Mix together the avocado and sesame oil.
  • Brush over the fish 30 minutes before cooking.
  • Heat a barbecue on high and brush with some of the oil marinade.
  • Cook fish on the hottest part of the barbecue, searing the fish.
  • Cook for about 1-1½ minutes; turn over and cook for another minute.
  • Move fish to the coolest part of the plate and turn off the heat.
  • Cover the fish with foil or a saucepan lid and rest for 4-5 minutes.
  • Drizzle hoisin glaze over fish and serve with rice and bok choy.
 

 

Kahawai

Kahawai

Known in more recent times as ‘the people’s fish’, kahawai is a species that European New Zealanders, until recently, treated with some disdain.

“I don’t eat bait!” was for many years a common call as the kahawai was kept for just that – as a lure to catch more popular recreational species. But like gurnard and trevally, kahawai is seen more commonly on our tables and is less often destined for the bait freezer.
