Grilled Kingfish Nuggets

Ingrediants:

  • 500 grams fresh choice kingfish steaks.
  • Bacon rashers.
  • Barbecue sauce (Lone Star brand is great).
  • Toothpicks.

Directions:

  • Cut the kingfish steak into approximately 25cm nuggets.
  • Cut the bacon rashers into strips.
  • Strips should be long enough to go around the kingfish pieces.
  • Wrap a strip of bacon around each piece of fish.
  • Secure using one or more toothpicks.
  • When barbecue is hot, put all nuggets on and let them cook.
  • Take off just before the bacon starts to get crispy.
  • Put the sauce in a large bowl.
  • Transfer the nuggets to the bowl of barbecue sauce and coat well.
  • Meanwhile, lower the heat on the barbecue.
  • Put the nuggets back on the barbecue and shut the lid.
  • Turn the heat to really low.
  • Let barbecue sauce glaze over the kingfish, approximately 10 minutes.
 

 

Kahawai

Kahawai

Known in more recent times as ‘the people’s fish’, kahawai is a species that European New Zealanders, until recently, treated with some disdain.

“I don’t eat bait!” was for many years a common call as the kahawai was kept for just that – as a lure to catch more popular recreational species. But like gurnard and trevally, kahawai is seen more commonly on our tables and is less often destined for the bait freezer.
