Deep Dish Left-Over Turkey Pie

Ingrediants:

  • 6 medium potatoes, diced.
  • 3 cups turkey meat, cooked and chopped.
  • 6 medium carrots, diced.
  • 1½ cups flour.
  • 1 small onion, chopped.
  • 2 teaspoons baking powder.
  • ¼ cup green capsicum, chopped.
  • ½ teaspoon salt.
  • 2 tablespoons butter.
  • ¼ cup butter.
  • 1 can cream of chicken soup.
  • ½ cup milk.

Directions:

  • In a saucepan, cover the potatoes and carrots with water.
  • Cook until tender, about 15-20 minutes.
  • Drain, reserving 1 cup of the liquid, transfer to casserole dish.
  • Sauté the onion and capsicum in 2 tablespoons of butter until tender.
  • Transfer to casserole dish.
  • Blend the soup and reserve liquid in a bowl.
  • Add soup mix and turkey meat to the casserole dish.
  • Bake at 200°C for 15 minutes.
  • Biscuits: Combine the flour, baking powder and salt in a bowl.
  • Cut in the butter until crumbly, add the milk, and mix well.
  • Knead lightly on a floured surface, roll and cut with a 2" biscuit cutter.
  • Arrange over turkey mixture.
  • Brush biscuits with additional milk, and bake for 15 minutes longer.
 

 

Turkey
Turkey Turkeys were introduced to New Zealand in the 1890s and have since evolved into semi-domestic animals. Most farms around New Zealand have a mob of turkeys that roam wild within their own preset boundaries. While turkeys can fly, they prefer to travel by foot and can be quite tough as a result; especially when compared with the shop-bought turkey most of us are used to.
