Smoked Marlin with Spinach and Hollandaise

Ingrediants:

  • 4 bunches spinach.
  • 400 grams smoked marlin.
  • 50ml cream.
  • 50 grams butter.
  • A little freshly-grated nutmeg.
  • White pepper, for seasoning.
  • Hollandaise sauce, for garnish.

Directions:

  • Break the smoked fish into chunky pieces.
  • Warm it in the cream in a saucepan over a low heat.
  • Heat a frying pan over moderate heat and add butter, then the spinach.
  • Stir with a fork and add a sprinkling of nutmeg and seasoning.
  • Place the buttered spinach into a ramekin.
  • Fill ¾ full with the smoked fish.
  • Top with a little Hollandaise sauce.
  • Place under a hot grill for only a minute to glaze the tops.
  • Serve at once.
