John Dory with Grapes

Ingrediants:

  • 4 john dory fillets
  • ¼ cup flour
  • Salt and pepper, to taste
  • 1 tablespoon unsalted butter
  • 1 tablespoon canola oil
  • 1 teaspoon grated ginger root
  • ½ cup dry white wine
  • 1 cup green grapes, cut in half
  • 1 teaspoon sugar
  • ½ cup toasted sliced almonds

Directions:

  • Combine flour, salt and pepper to taste in a large, shallow dish.
  • Coat fish fillets in this mixture.
  • Melt butter and oil in a frying pan over medium heat and add ginger.
  • Stir, then add coated fillets.
  • Sauté for 3-4 minutes on each side until the fish begins to turn golden.
  • Remove to an ovenproof dish, cover and keep warm in low oven.
  • Add wine to the pan and cook.
  • Stir wine to incorporate bits from the bottom of the pan.
  • Cook for 4-5 minutes to reduce the liquid, then add grapes and sugar.
  • Cook 4 minutes longer, stirring constantly.
  • Season to taste with salt and pepper.
  • Add the fillets and sprinkle with almonds.
  • Serve immediately. Serves four.
 

 

John Dory
John Dory Ask most anglers to list their ‘top five’ table fish and it is a safe bet the majority will include john dory.
While it might not win too many beauty contests with its angular, extendable jaw, the john dory is popular with those who do the cooking and those doing the fish eating in any angling household.
It has a fine flesh that is both firm and flavoursome. Filleting and skinning it can be something of a mission, but the effort is well worthwhile. John dory is not a scavenger like snapper; it is a hunter. It relies on stealth and concealment, waiting for dinner to swim its way before extending its jaws and ‘sucking’ its prey in.
