Poisson et Fruits de Mer

Ingrediants:

  • 500 grams john dory (or any white fish), cubed
  • 1 cup cooked and diced crayfish
  • 1 cup prawns or shrimps
  • 1 dozen scallops
  • 1 cup cream
  • 1 cup dry white wine
  • 1 teaspoon curry (powder or paste)
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup grated cheese

Directions:

  • Heat a cup of dry white wine in a saucepan on moderate heat.
  • Add fish and scallops, poaching for 2-3 minutes. Do not overcook.
  • Remove the seafood and put into a bowl.
  • Add other cooked seafood, i.e. prawns, shrimps or crayfish and set aside.
  • Put wine into a jug and set aside.
  • Using the same saucepan:
  • Sauté in butter chopped spring onions and fresh mushrooms until soft.
  • Add one heaped teaspoon of curry and one tablespoon of flour.
  • Stir in reserved white wine a little at a time.
  • Add a cup of cream until thickened.
  • Add the seafood and remove pan from heat.
  • Put into ovenproof ramekins (small bowls) and top with grated cheese.
  • Bake at 180°C for10 minutes, or until browned and bubbly.
  • Serve immediately.
 

 

John Dory
John Dory Ask most anglers to list their ‘top five’ table fish and it is a safe bet the majority will include john dory.
While it might not win too many beauty contests with its angular, extendable jaw, the john dory is popular with those who do the cooking and those doing the fish eating in any angling household.
It has a fine flesh that is both firm and flavoursome. Filleting and skinning it can be something of a mission, but the effort is well worthwhile. John dory is not a scavenger like snapper; it is a hunter. It relies on stealth and concealment, waiting for dinner to swim its way before extending its jaws and ‘sucking’ its prey in.
