Barbecued Venison Eye Fillet

Ingrediants:

  • 1 venison eye fillet.
  • Olive oil (about 4 tablespoons).
  • ½ cup raw sugar.
  • 4 cloves garlic, crushed.
  • ½ cup light soy sauce.

Directions:

  • Roll venison in a few tablespoons of olive oil and then coat with sugar.
  • Heat the barbecue until very hot.
  • Sear the venison, turning frequently, for about 15-20minutes.
  • Close barbeque lid between turnings.
  • The sugar should caramelise and turn black.
  • While cooking the venison prepare the marinade.
  • Heat garlic, olive oil and soy sauce in a pot over a low heat.
  • Remove venison from heat and place on 3-4 layers of heavy tinfoil.
  • Slice ¾ way through meat to create partial medallions.
  • Pour over prepared marinade.
  • Wrap quickly to keep heat in and seal ends of foil.
  • Leave for a few minutes, or longer, for marinade to soak through.
  • Serve with ciabatta bread. Also makes a delicious cold cut.

Fortunes have been made and lost in the venison trade, with both live and dead animals, as prices fluctuated wildly over the years. Deer have conversely been described as a pest and a godsend, depending whether you are a greenie or a hunter.
