Bachelor’s Albacore

Ingrediants:

  • 2 loins of albacore.
  • 1 packet chicken stuffing mix.
  • 1 tomato.
  • 1 lemon.
  • 1 onion.
  • Salt and ground pepper, to taste.
  • Olive oil.

Directions:

  • On a sheet of tinfoil, lay out the albacore loins, slightly separated.
  • Mix the dry chicken stuffing with enough water to bind.
  • Lay the mixture between the albacore loins.
  • Slice the onion, tomato and lemon and lay over the top.
  • Add ground pepper and salt, to taste, and drizzle all over with olive oil.
  • Close up the foil into a leak-proof package.
  • Bake for about 20-25 minutes at 250°C in the oven.
  • Can also use a lidded barbecue, or even a standard barbecue plate.
  • If using the latter, double the tinfoil to prevent ripping.
  • Turn the packet once.
  • Can be served hot straight out of the foil or cold with a salad.
 

 

Tuna
Tuna Many nations put a huge price on the meat of a number of tuna species, especially big-eye, yellowfin and bluefin tunas.
A single fish can fetch tens of thousands of dollars, particularly at Asian fish markets, if it’s handled correctly to ensure it arrives quickly and in prime condition.
The regard in which some tuna species are held has resulted in over-fishing throughout the Pacific, and in recent years yellowfin tuna especially have failed to reach New Zealand territorial waters in any numbers. A yellowfin or big-eye tuna is a prized catch, not only as a sportfish, but also for its eating qualities.
