Snapper Pasta

Ingrediants:

  • 1 kilogram snapper fillets, boned and skinned
  • 1 cup of diced courgettes, mushrooms and onion
  • ½ cup of diced capsicum and broccoli
  • 1½ cups pasta (seashell)
  • Salt and pepper
  • Virgin olive oil

Directions:

  • Bring a pot of water to the boil.
  • Add a pinch of salt and a dash of olive oil.
  • Add pasta and cook until al dente (soft to the bite).
  • Place in colander and drain, mixing in a dash of olive oil.
  • Cut fish into 2½cm cubes.
  • Add dash of olive oil to hot pan and sauté vegetables until just firm.
  • Add tomato and simmer.
  • Add fish followed by cooked pasta and mix in.
  • Keep simmering for around 10 minutes until fish just cooked.
  • Garnish with coriander or Italian parsley.
 

 

 

Snapper

From a culinary perspective, snapper is probably one of the most versatile species we have in our waters.
It is relatively easy to catch, readily available throughout the North Island and the top half of the South Island, and can be prepared in many ways. It’s as delicious as raw fish as it is smoked and good for almost everything in between.
Snapper has played an important part in our history. Known as ‘tamure’ to the Maori and ‘bream’ to the early European explorers and settlers, the humble snapper was a regular part of their diet, either eaten fresh, or else salted, dried or smoked.
