Smoked Red Cod Soufflé

Ingrediants:

  • 250 grams kippered or smoked red cod fillets.
  • 4 eggs.
  • 250 grams butter.
  • 25 grams tasty or Parmesan cheese, grated.
  • 1 tablespoon plain flour.
  • 100ml standard milk.
  • 1½ tablespoons cream.
  • Sea salt and ground pepper.

Directions:

  • Peel back the skin of the smoked fillet.
  • Flake and then mash the fish well.
  • Make a white sauce base by melting butter.
  • Stir in flour followed by milk to create a smooth paste.
  • Add cheese until it melts.
  • Stir in egg yolks, fish and seasoning, to taste.
  • Fold in stiffly-beaten egg whites.
  • Pour in soufflé dish and bake at 200°C for 25 minutes.
