Oriental Gemfish

Ingrediants:

  • 750 grams gemfish fillets, cut into 2cm pieces
  • 125 grams green beans, sliced
  • 125 grams button mushrooms, sliced
  • 2 tablespoons Asian fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon flour
  • 1 cup peanuts, crushed
  • 2 chillies, deseeded and chopped
  • 1 capsicum, cut into fine strips
  • 1 tablespoon lemon grass
  • 4 cloves garlic, peeled
  • ½ cup sake (or white wine)
  • 2 teaspoons ground pepper
  • 1 pinch sea salt
  • 4 spring onions, sliced
  • Sesame oil for frying

Directions:

  • In a bowl:
  • Mix fish sauce, sugar, flour and a little sake to create a sauce.
  • In another bowl:
  • Combine peanuts, chillies, spring onion and strips of capsicum.
  • Set aside.
  • Pound or blend lemon grass, garlic, salt and pepper to form a paste.
  • In a frying pan heat some sesame oil.
  • Brown the fish paste over a medium heat for 2-3 minutes.
  • Turn up the heat, adding beans, mushroom and the fish.
  • Stir gently for a further 2-3 minutes ensuring fish is well coated.
  • Add the fish sauce and stir in until the liquid thickens.
  • Serve on a bed of rice topped with peanut mixture.
 

 

Gemfish
Gemfish When you are fishing in deep water for more desirable species such as hapuku and bass, those tentative bites you sometimes feel are quite often gemfish. Having hauled these fish out of the depths, you might be quite disappointed, but gemfish can make for a tasty meal if prepared properly.
