Asian Elephant Fish Broth

Ingrediants:

  • Elephant fish, filleted and skinned
  • Chicken bones
  • 1 teaspoon tamarind powder
  • Stalk celery, chopped
  • Small can of pineapple chunks
  • 2 tomatoes, quartered

Directions:

  • Boil a pot of water and two chicken bones to make chicken stock.
  • Remove the bones after boiling for half an hour.
  • Add a teaspoon of tamarind powder.
  • Stir and add diced celery, pineapple and tomato quarters.
  • Bring the mixture to a boil on low heat.
  • Add the chunks of elephant fish until the meat turns white and firm.
  • Remove meat onto a dish.
  • Scoop yourself a bowl of soup.
  • Add preboiled rice noodles to your bowl.
  • Then enjoy the noodle soup with your fish.
