Elephant Fish and Tomato Gratin

Ingrediants:

  • 500 grams elephant fish fillets
  • 60 grams grated mature cheddar (tasty) cheese
  • 1 tablespoon fresh oregano, finely chopped
  • 4 tomatoes, peeled and sliced
  • 2 cloves garlic, finely diced

Directions:

  • Arrange half the fillets in a lightly greased, shallow baking dish.
  • Sprinkle with one-third of the cheese.
  • Top with half of the tomato slices, along with oregano and garlic.
  • Add remaining filets; sprinkle over remaining cheese.
  • Top with remaining tomatoes, followed by cheese.
  • Bake for 30 minutes at 180°C, or until fish is cooked.
