Gurnard Tortillas

Ingrediants:

  • 500 grams gurnard fillets, boned and skinned.
  • 1 teaspoon minced garlic.
  • 35ml lime juice, divided.
  • White pepper.
  • 30 grams reduced-fat sour cream.
  • 30 grams mayonnaise.
  • 1 dash hot pepper sauce.
  • 8 tortilla wraps, warmed.
  • 30 grams butter.
  • 50 grams shredded lettuce.
  • 180 grams chopped fresh tomato.

Directions:

  • Cut fish into 25mm cubes.
  • Fry garlic in butter and 5 teaspoons lime juice for 30 seconds.
  • Add fish and pepper, to taste.
  • Cook for 6-8 minutes over medium heat until fish flakes easily.
  • Combine the cream, mayonnaise,pepper sauce and remaining lime juice.
  • Place a spoonful of sauce with a spoonful of cooked fish, on each tortilla.
  • Top each with lettuce, tomato and sour cream sauce; fold over.
 

 

Gurnard
Gurnard ‘Carrots’, ‘grunters’, or just plain old gurnard, this species was one of the piscatorial under-achievers in the culinary world for many years.
They are a magic fish, resplendent with their colourful ‘wings’, but their succulent fillets have not, until recent times, always been fully appreciated.
As the more popular species such as blue cod and snapper became more expensive and difficult to catch, gurnard came increasingly to the fore. The flesh is firm and flavoursome and has become popular, along with tarakihi, in the fish and chip shops around the nation, not to mention on our own tables.
