Great Balls of Piper

Ingrediants:

  • 16 piper fillets.
  • 1 large onion, chopped finely.
  • 1 large onion, dice coarsely.
  • 1 cup breadcrumbs.
  • ½ cup Italian parsley, chopped finely.
  • 1 teaspoon cayenne pepper.
  • Black pepper and sea salt, to taste.
  • 2 eggs, beaten.
  • Flour.
  • ½ cup rice bran oil.

Directions:

  • Mince piper fillets in a food processor.
  • Add one large chopped onion and bread crumbs.
  • Add parsley, cayenne, black pepper, salt and eggs.
  • Mix well and shape into balls.
  • Roll in flour.
  • Heat the cooking oil in a large cast-iron pan and brown the balls.
  • Stir gently while cooking.
  • Add the other chopped onion to the pan.
  • Add 3 cups fish stock and stir.
  • Cook slowly over low heat for about 30-45 minutes.
  • Serve over cooked rice with stir-fry vegetables on the side.
