Pipis in Wine and Garlic Recipe

  • 50 pipis in shell, cleaned
  • 4 cloves garlic, chopped finely
  • Ground black pepper
  • 1 cup medium white wine
  • 80ml olive oil
  • 3 teasponns basil pesto (optional)
  • Handful chives, chopped.
  • Ensure pipis have soaked for at least 6 hours and have clean shells.
  • Place all ingredients in a lidded pot or wok and simmer until pipis open.
  • Mix well with juices then serve, garnished with chopped chives.
