Fruity Hapuku Marinade Recipe

  • 1 kilogram hapuku cut into meal-sized pieces
  • ½ cup canned tomato pieces in thick purée
  • 1 teaspoon crushed garlic
  • ¼ cup Kikkoman soy sauce
  • ½ cup freshly-squeezed orange juice
  • ½ cup freshly-squeezed lemon juice
  • 1 teaspoon oregano
  • Ground salt and lemon pepper.
  • Mix tomato purée, garlic, soy sauce, orange and lemon juices.
  • Add oregano and ground salt and pepper to season.
  • Lay over fish for a minimum of 30 minutes but not longer than 2 hours.
  • Oil a pan or barbecue plate and cook quickly, turning only once.
  • Remove from heat just as middle of fillet begins to turn opaque.
  • Brush fillets several times with marinade during cooking.
