Bachelor’s Albacore Recipe

  • 2 loins of albacore
  • 1 packet chicken stuffing mix
  • 1 tomato
  • 1 lemon
  • 1 onion
  • Salt and ground pepper, to taste
  • Olive oil.
  • On a sheet of tinfoil, lay out the albacore loins, slightly separated.
  • Mix the dry chicken stuffing with enough water to bind.
  • Lay the mixture between the albacore loins.
  • Slice the onion, tomato and lemon and lay over the top.
  • Add ground pepper and salt, to taste, and drizzle all over with olive oil.
  • Close up the foil into a leak-proof package.
  • Bake for about 20-25 minutes at 250°C in the oven.
  • Can also use a lidded barbecue, or even a standard barbecue plate.
  • If using the latter, double the tinfoil to prevent ripping.
  • Turn the packet once.
  • Can be served hot straight out of the foil or cold with a salad.
